The nutrition segment focused on producing lipid ingredients for products such as infant formula and dietary supplements. A key product in this area was InFat®, a beta-palmitate ingredient designed to mimic the fat structure of human milk, which was marketed through Advanced Lipids, a joint venture with AAK. The company also produced krill oil and cognitive health ingredients like Sharp-PS, a form of phosphatidylserine. Its clientele consisted of companies in the functional food, dietary supplement, and infant nutrition industries. The business model centered on transforming basic raw materials into high-value ingredients through proprietary processing, clinical validation, and patent protection.

The pharmaceutical division, operating under the subsidiary VAYA Pharma, developed and sold branded, lipid-based medical foods. These products were formulated for the dietary management of medical conditions, including cardiovascular and neurological disorders. Key products included Vayarin® for managing ADHD in children and Vayacog® for addressing early memory impairment. These prescription medical foods were regulated by the FDA and distributed through pharmacies in the United States.

Enzymotec achieved a significant milestone in September 2013 with a $63.5 million initial public offering on the NASDAQ. Over its history, the company raised a total of $100.4 million in funding. In October 2017, flavor and ingredients company Frutarom announced its intention to acquire full ownership of Enzymotec for approximately $210 million. The acquisition was completed in January 2018, leading to Enzymotec's delisting from the NASDAQ and its full integration into Frutarom's operations. Following the acquisition, Frutarom sold Enzymotec's krill oil business to Aker BioMarine.
