Aleph Farms, established in 2017, operates at the intersection of food technology and cellular agriculture, focusing on the production of cultivated meat. Aleph Farms' proprietary technology, co-developed with Professor Levenberg's lab, facilitates the cultivation and differentiation of various cell types—such as those for support, fat, and blood vessels—into a complex, three-dimensional structure that mimics the texture and sensory experience of a conventional steak. The initial cells are sourced from a living cow, and a single collection can be used to grow thousands of tons of cultivated meat, creating a more secure and resilient food supply chain.

The business model revolves around the production and sale of these cultivated meat products, targeting consumers and restaurants seeking ethically produced and environmentally friendly protein sources. The company has achieved significant milestones, including the creation of the world's first cultivated thin-cut beef steak in 2018 and a more complex ribeye steak in 2021, showcasing its advanced tissue engineering capabilities. In a notable achievement, the company successfully grew its product in space aboard the International Space Station in 2019, demonstrating the potential for food production in harsh environments.
