Yooli Foods, operating under the corporate name iSnak Corporation, was co-founded by the husband-and-wife team, Yuliya and Jeff Flynn. Yuliya, who grew up in Kazakhstan, was familiar with the popularity of farmer's cheese snacks in Eastern Europe and saw an opportunity to introduce a similar concept to the American market. The Irvine, California-based company aimed to create a new category within the protein snacking segment.

The company's core business revolves around producing and distributing farmer's cheese products. This pressed cottage cheese is high in protein and low in fat. Yooli Foods developed a production process to create a version with a more neutral taste compared to the traditionally acidic Eastern European farmer's cheese, along with a higher protein content. The company targeted the US retail market, positioning its offerings as a novel option in the dairy aisle.

Yooli Foods introduced two main product lines: farmer's cheese cups, called Yooli Cremes, and chocolate-coated farmer's cheese bars. The Yooli Cremes were designed to be versatile, serving as a spoonable, dippable, or spreadable snack available in various flavors. The bars represented a more unique concept, requiring the company to source specialized equipment from overseas to facilitate production. To manufacture its products, Yooli Foods partnered with an SQF level 3 certified co-packer in Wisconsin. In 2017, the woman-owned business was selected to participate in a dairy accelerator program run by Land O' Lakes.
