The business model was frequently compared to "WeWork for kitchens" or, as co-founder Nick Devane preferred, the "AWS for food". It offered a pay-as-you-go service where clients could rent fully equipped, licensed kitchen space by the hour or month, drastically reducing the high upfront capital costs typically required to launch a food business. The target market consisted of emerging food businesses, including caterers, bakers, consumer packaged goods (CPG) companies, and delivery-only concepts. A significant portion of its clientele, over 70%, were businesses owned by women and minorities. Beyond physical space, Pilotworks provided a distribution network and access to a community of over 75 mentors for guidance on topics like fundraising, legal matters, and branding.
The company embarked on an aggressive expansion strategy, fueled by over $15 million in venture capital, including a significant $13 million Series A round in December 2017. This led to the opening of locations in Brooklyn, Newark, Chicago, Dallas, Providence, and Portland, Maine. However, this rapid scaling is cited as a primary reason for its downfall. In June 2018, co-founder Nick Devane stepped down as CEO, replaced by COO Zach Ware. Signs of trouble became more apparent when the Providence and Portland locations were closed in the late summer of 2018. On October 13, 2018, Pilotworks ceased all operations abruptly, citing a failure to raise the necessary additional capital. The sudden closure left approximately 175 member companies without kitchen access just before the critical holiday season, causing significant disruption and financial loss for the small businesses that relied on its infrastructure.
